Subsea Estate: The Southern Hemisphere’s First Open-Ocean Winery

Located at the rugged tip of Western Australia in Augusta, Subsea Estate is pioneering a revolutionary maturation process that challenges traditional viticulture. By utilising "ocean cellaring" in the pristine waters of Flinders Bay, this innovative producer harnesses the unique environmental conditions of the Southern Ocean—total darkness, consistent cool temperatures, and rhythmic hydrostatic pressure—to evolve wine profiles in ways land-based cellars cannot replicate.

Technical Precision in the Deep

Subsea Estate’s maturation is a sophisticated operation designed to enhance the complexity and structure of each vintage. The estate utilises two primary methods of underwater aging:

• The Ocean Vats: The majority of the collection matures in large, patented vats anchored 20 meters below the surface. This environment keeps the wine in constant motion, allowing for a secondary fermentation process that adds incredible body and richness.

• Pure Ocean & Land Blends: Once retrieved, these "Pure Ocean" wines are either bottled straight or expertly blended with traditional land-aged wines. These selections are presented in standard, elegant wine bottles, offering the distinct characteristics of sea-aging at an accessible price point.

Seasons of the Sea:

With Subsea Estate, the excitement lies in the journey of discovery. Unlike traditional wines that tell the tale of terroir on land, Subsea Estate wines speak of ocean rhythms and seasonal maritime shifts—the seasons of the sea. Summer and winter will introduce notable differences in wave energy and temperatures.

Each Immersion (our vintages) captures the unique seasonal character of the Southern Ocean—from wild winter storms to energetic summer swells—making every vintage a distinct maritime experience. Wave energy, temperature and tides vary with each season—so this will change how the wine evolves and expresses itself, based more on the seasons of the sea than on the land.

The Land & Ocean wines capture the best of both worlds, both the terroir and seasons on the land and in the ocean. The Pure Ocean is a pure, dynamic song of the seasonal sea’s temperament. These seasonal variations now drive Subsea’s new explorations and trials of how different immersion times and conditions influence each wine’s voice and character.
